The door has an Fiberglass and aluminum threshold, so the flooring would have to but the threshold or silde under it. I would only make the flooring slide under about a 1/4 to 3/8 of an inch. Curt, Have you ever received any responses to your request? I have a similar situation, but in mine the planks are running perpendicular to (aluminum) door and slider thresholds, and the aluminum will rise above the top surface of the wood floor.
Like a mini picture frame for the door threshold. I would leave a small gap and fill it with caulk that is similar color as the floor. I would run the perpendicular floor boards into this border for the french doors. Similar to one of your mentioned methods.

Thanks for all the interest and suggestions. As nimrod thought the jamb and threshold are one unit and flush on the inside. Since we replaced old 3/8" engineered floor with 3/4" solid, the clearance between door and floor is limited at just over 1/4" inch. I found a piece of overlap threshold where the overlap is slightly over 1/4".
